Dalrymple Pinot Noir 2009

Each block of Pinot Noir from both the Dalrymple and selected grower vineyards are hand-harvested and kept separate throughout the entire winemaking process. Some blocks are divided into smaller parcels to maximise blending options. A variety of classical Pinot Noir winemaking techniques are employed: hand sorting fruit, cold soaking, whole bunch inclusion, hand-plunging and wild fermentation; all selected to create wines that combine fruit intensity with layers of texture and persistent varietal characters. The Dalrymple Pinot Noir 2009 is rich, ruby red in colour with crimson notes. The wine displays an intense lifted nose of florals, spices and fruit. Initially the aromas are of rose petals, lavender, nutmeg and cinnamon; the wine then opens in the glass to reveal poached quince and raspberry fruits with delicate char and vanilla of French oak. The palate is juicy and vibrant with layers of strawberry and raspberry fruit, creamy oak influence and fine minerally tannins. Suitable for vegans

Each block of Pinot Noir from the Dalrymple vineyard is hand-harvested separately and kept separate throughout the entire winemaking process. Some blocks are then divided into smaller parcels, to maximise blending options. A number of classical Pinot Noir winemaking techniques are employed: hand-sorting fruit, cold soaking, and whole bunch inclusion, hand-plunging and wild fermentation. In 2008 two blocks shone above the rest, F Block and D Block, on the face and crest of our main vineyard slope, these blocks looked wonderful from flowering to harvest. Twelve months of ageing in glass means the wine is released as it approaches the peak of its development. This wine’s colour is medium pomegranate red with a lifted complex nose displaying lavender, spice, raspberry fruits and forest floor. Other aromas include savoury notes of seaspray and oyster shell which reflect the vineyard's regionality. The 2008 Estate Pinot Noir has a fine palate with a seam of redcurrant, blood plums, ironstone and truffles. It is layered, complex and savoury with elegant oak redolent of roasted almonds. A Pinot Noir of great length and purity with fine suede tannins.

Dalrymple Pinot Noir J29 Block 2006

The J29 fruit was handpicked, gently de-stemmed and left to soak to encourage supple tannin development and rich colour. Hand plunged and pressed directly to French barriques, the wine represents traditional handcrafted winemaking. The wine has a bright colour with good depth, crimson and ruby notes. A lifted nose expressing the ripe Pinot Noir fruits of raspberries, dark cherries and plums. Touches of vanilla, pepper and cream add complexity. A supple and juicy palate with balanced bright fruits and savoury notes of classical Pinot Noir. The fine tannins, spiciness and fruit intensity are truly representative of this small block. Bottle aging has given this wine finesse, wonderful complexity and has great persistence.

Dalrymple Sauvignon Blanc 2008

Multiple blocks of Sauvignon Blanc were harvested to maximise varietal flavours. Winemaking techniques, including aromatic yeast selection, barrel ferment and cold ferment were chosen to enhance the fruit power of this Tasmanian Sauvignon Blanc, to build richness and complexity. Dalrymple Sauvignon Blanc 2008 is pale straw in colour with green highlights. The nose is powerful and lifted, displaying complex Sauvignon Blanc notes; nettles, passionfruit, spice and vibrant grapefruit. The palate opens rich and layered, demonstrating the power of Tasmanian cool climate fruit. Generous fruit flavours of feijoa and passionfruit are balanced by grapefruit zest and a sorbet-like natural acidity.
